Hearty Belgium Mushroom Stew over Smashed Red Potatoes

In the days before Food Network, I remember watching Jacques Pepin and Julia Childs play with chickens on Saturday afternoon PBS.  I still recall a specific lesson from Chef Pepin, where we was demonstrating how to peel a pineapple.  Cutting off the rough skin and removing the "eyes" he said, "Do not be cheap with your pineapple".  Yes, a true chef is always thinking about serving his guests the best possible food.  "Do not be cheap"

No pineapples in this recipe, based on a Belgian Beef Stew recipe from Chef Pepin.  Without the price of beef, though, you can buy some pretty impressive mushrooms :)

5 oz portabella mushrooms
8 oz cremini mushrooms
1 medium onion
1 medium carrot
2 Tbs brown rice flour
12-ounce bottle Belgian-style pale ale
2 bay leafes
1 tsp dried thyme
2 cups Veggie "Beef" Stock
1/2 cup frozen peas
Salt and pepper, to taste
Chopped chives, for garnish
