Creole Red Beans and Rice

Say a prayer to the Creole Holy Trinity: The Onion, The Celery, and The Green Bell Pepper.  Red beans and rice is a Mardi Gras tradition, usually made on Monday from the pork and vegetable scraps left after a big Sunday night feast.  To get the same smoky flavor of cured pork, I swap out with smoked paprika.
