Southwestern Black Bean Burger

1 red bell pepper
1 medium sweet potato (about 2 cups diced)
1 tsp paprika
1/2 tsp cumin
1/4 cup brown rice flour
1 (15 oz) can black beans
1/4 tsp salt
1/4 tsp black pepper
1 tsp lime juice
2 Tbs chopped cilantro
1/4 cup corn kernels, frozen and thawed
Avocado, for serving

1. Saute peppers and sweet potato with paprika and cumin until soft

2. Drain and rinse beans

3. Add brown rice flour and beans and cook just until dry.

4. Puree the sweet potato mixture.  Then combine with salt, pepper, lime juice, cilantro, and corn.  Taste to adjust seasoning.

5. Shape into patties, 1/2 cup each, and place on a parchment paper or Silpat

6. Bake at 350 till browned, 45-50 minutes.

7. Top with avocado and serve
