Peppery Southern Grits with Sweet Heat Tomato Jam

This Southern classic keeps its roots with flavor from a host of peppers: black pepper, paprika, and cayenne.  It swaps out for almond milk to avoid the traditional dairy milk and heavy cream.  The key lies in good grits -- Anson Mills has been grinding them for years.  If Anson Mills isn't down your street, you might be able to find your own store's white grits, yellow grits, or even polenta.  Whatever you do, though, avoid the instant.  Because Southern love gets richer with time.

1 cups water
2 cups unsweetened plain almond milk (or soy milk)
1/2 Tbs black pepper
½ tsp salt
¼ tsp paprika
1/8 tsp cayenne
1 bay leaf
2 tsp garlic
1 cups grits

To make grits:  In a large pot, combine water, almond milk, black pepper, salt, paprika, cayenne, bay, and garlic.  Cover and bring to a boil (be careful not to let it overflow!)  When the liquid is at a rapid boil, grab a whisk.  Gently stream in the grits, slow and steady, whisking continuously.  Continue whisking until the mixture comes back to a boil for 1 minute.  Then, reduce heat to low, cover, and simmer until grits are tender, about 15 minutes.

Adjust seasoning and serve with Sweet Heat Tomato Jam, Black Eyed Peas, Stewed Collards, or any other Southern favorites.

Servings: 4
