Makes 12 sliders

Cook extra quinoa and use freezer ingredients to quickly make these satisfying sliders.  Great for snacking, dinner, or an eye-catching summer party.

3/4 cup white quinoa
1 cup frozen Broccoli, thawed
1 cup frozen peas, thawed
1/4 cup basil chiffonade
2 Tbs nutritional yeast
1/4 cup Brown Rice flour
1/2 tsp salt
1/4 tsp pepper

To cook quinoa: Place quinoa and 1 1/2 cup of water in a small pot.  Cover, bring to a boil, and reduce to a simmer.  Cook until quinoa is done, about 10-12 minutes.  Add more water, if needed, to prevent burning.  When done, remove lid and let cool.  Cook off any excess water if needed.  You want this as dry as possible.

To make sliders: If broccoli and peas are still frozen, thaw quickly in the microwave.  Drain any excess water.  Using your knife, a vegetable chopper, or a food processor, roughly chop the broccoli and peas into smaller-than-bite-sized pieces.  Combine the broccoli, peas, quinoa, basil, nutritional yeast, brown rice flour, salt, and pepper.  Stir well to mix.  Check seasoning and adjust as needed.

It is important that the mixture is not too wet.  The mixture should hold together when you make a slider-shaped patty.  If it is too wet, mix in more brown rice flour.  Use a 1/4 cup measure, scoop out and shape the mix into sliders.  Place on a non-stick baking mat on a large baking sheet.

To cook sliders:  Cook sliders in a preheated 400 degree oven, 20-25 minutes, flipping after 10 minutes.  You can also cook over medium heat on a grill (best to use a foil sheet in case there is crumbling) or in a saute pan on the stove (medium heat).

These freeze well (after shaping, before baking). Simply go right from freezer to oven when ready to serve.
