Twice-Baked Stuffed Potatoes

4 medium Russet Potatoes (for stuffing),
1 medium onion
1 tsp smoked paprika,
1 cup broccoli florets
1/2 cup nutritional yeast,
2 Roma tomato, cored, seeded, and diced
2 Tbs cashew butter
½ cup almond milk, unsweetened plain
Salt, pepper to taste

To cook potatoes:  Scrub potatoes and place on a baking sheet.  No need to pierce!  Just simply roast at 375 degrees for about 1 hour, or until a knife can easily be inserted and removed.  When potatoes are done, remove from the oven and let cool until you can hold the hot potatoes :)

To make the filling:  Gently sweat the onion with the smoked paprika, salt, pepper, and a couple tablespoons of water over medium heat.  Cook until onions are translucent, about 10 minutes.  Add more water as needed to prevent burning.  Add the broccoli florets and cook another 1-2 minutes, until the broccoli just turns a bright green (you can also use frozen broccoli florets or any frozen green veg like chopped spinach, peas, or even brussels sprouts).  When broccoli is done, turn off the heat and pour mixture into a separate bowl.

To finish filling:  When potatoes are cool enough to handle, slice lengthwise and split open.  Scoop out the potato flesh, into the bowl with the onion and broccoli, being careful not to break the potato skins.  To the same bowl, add the nutritional yeast, diced tomato, cashew butter, almond milk, salt, and pepper.  Stir well to combine.  Adjust seasoning as needed.  A little hot sauce or cayenne might suit a spicier pallet.

4. To re-stuff the potatoes:  Use a big spoon to re-stuff the potato skins.  Place the skins in individual foil pieces and bake for 10-15 minutes, or until warm.  You can also make these ahead of time and just re-bake right before serving.
