Chickpea Avocado Pesto on Brown Rice Pasta

Who needs olive oil, cheese, or pine nuts when you have avocado, nutritional yeast, and garbanzo beans?  A handful of spinach helps keep this bright green.  Serve it over brown rice angel hair pasta for gluten-free, or use it as a spread on sandwiches.

Chickpea Avocado Pesto

1 large avocado, pitted and diced
1 cup chickpeas
2 cups baby spinach, raw
2 tbsp water
1/2 cup fresh basil, chopped
1/2 tsp lemon juice
2 tbsp nutritional yeast
1/4 tsp salt

Servings: 4
Yield: 2 cups

Basically, you can make it a blender or food processor.  First, process the avocado, chickpeas, and spinach until creamy.  Then add the remaining ingredients.  The water helps make it creamy; add just a tablespoon at a time, as needed.
