Tagine actually refers to the clay pot that is used to cook this traditional Moroccan dish.  You can use a metal pot to copy this flavorful stew.  Tagine spices like paprika, turmeric, coriander, cumin, cinnamon, and cayenne reflect Morocco's location -- a historic trading convergence between Spain, northern Africa, and the Middle East.  Use any of your favorite fall veggies and serve over rice or whole wheat couscous.

Fall Vegetable Chickpea Tagine

1 medium butternut squash, cut into strips
2 large parsnips
1 small onion
1 can chickpeas (or about 2 cups cooked, no salt added)
1 1/2 teaspoon cumin
1 1/2 teaspoon sweet paprika
1/2 teaspoon turmeric
1/2 teaspoon coriander
1/4 teaspoon cinnamon
1/4 teaspoon cayenne pepper (optional)
1 lemon
2 cups vegetable broth
2 tbsp cilantro, chopped
