This pasta dish is a take on a classic Italian soup -- Beans 'n Greens.  Keeping a few staples on hand (canned white beans, whole wheat pasta, lemon, white wine) means this is an easy go-to meal.  In the time it takes to boil the pasta, dinner is on the table.

Lemony Kale Rigatoni Shopping List

8 ounce whole wheat rigatoni pasta
1 cup white wine
1 each lemon, zest and juice
2 tablespoons cashew butter
4 cloves garlic, thinly sliced
1 teaspoon red chili flake
2 tablespoons nutritional yeast
1 bunch kale, chopped
1 cup canned white beans (cannellini), rinsed and drained
1/4 teaspoon salt
2 tablespoons pistachios, chopped
