Autumn Quinoa Stuffing

Serves 4

Autumn’s bounty of squash provide plenty of opportunities to taste different varieties.  Try this stuffing with Delecata, Acorn, or Celebration for different colors and flavors.  Or serve the stuffing as an impressive side dish all on its own.  For help on squash varieties, check out this video with me at the Farmer's Market.

3/4 cup tri-color quinoa

¼ cup golden raisins

2 Tbs apple cider vinegar

1 medium sweet red apple (like Gala, Braeburn, or Honeycrisp), cored and diced

1 medium shallot, minced

2 Tbs chopped mint

2 cups chopped spinach

1/4 cup hazelnuts, toasted and chopped

** For stuffing: 2 Delicata Squash, halved

To toast quinoa and make Autumn Quinoa Stuffing:  First, place quinoa in a medium, dry pot.  Cover and heat over medium-high heat.  Toast quinoa for about 5-8 minutes.  You'll know it's working when the quinoa starts to "pop" and you get a nutty aroma.  Toast just until you smell this aroma and most of quinoa has turned a golden color.  Be careful not to burn your quinoa!

Add the raisin and 2 cups of water.  Cover and simmer until quinoa is done, about 10 minutes.  In the meantime, place the vinegar, apple, shallot, and garlic in a medium bowl.  Stir well to combine and coat the apple well with the vinegar.  This will help prevent the apple from browning.  Add the chopped mint, spinach, and toasted hazelnuts.  When the quinoa is done, drain off any excess water and add to the apple mixture.  Stir well to combine.  This can be made ahead of time.  Simply bring to room temperature before serving.

*** To roast squash:  Preheat oven to 425. Place squash cut-side-down, in a roasting dish.  Place enough water in the dish to cover the bottom, about 1 cup.  Roast squash in hot oven until a knife easily slides in and out, about 45 minutes.  Keep warm until ready to serve.  Meanwhile, make the stuffing.

When squash is ready, fill with Autumn Quinoa Stuffing and serve.
