Ginger Spiced Carrot Soup

Makes 12 cups

Loaded with Vitamins A, C, and K, minerals like Iron and  Calcium, and even 11% of your daily protein needs this soup will beat any under-the-weather ailment.  A spicy kick from ginger adds extra punch.

2 pounds carrots, diced
2 each shallot, chopped
1 bulb fennel, thinly sliced
2 tbsp ginger, minced
1 teaspoon coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups water

To make soup:  Place all ingredients in a large pot with just enough water to cover the bottom of the pot, about ½ cup.  Warm over medium-high heat.  Cover and sweat, until spices are aromatic and fennel is translucent, about 10 minutes.  During this time, stir often and add extra water, as needed, to prevent any browning.  If your carrots or fennel turn brown here, you’ll have brown soup.

Once fennel is translucent, add enough water to cover all of the vegetables by about ½ inch.  Bring to a boil, reduce to a simmer, and cook until carrots are completely tender, about 30 to 40 minutes.  Remove from heat and puree with a blender.  Enjoy.

This soup also works great in a slow cooker – simply throw everything in, set to low for 6 to 8 hours and puree before enjoying.  You can add 2 cups of cooked white beans to transform this snack into a satisfying meal.
