Artichoke Tarragon Potato Salad

Mix yellow, purple, and red potatoes for a colorful salad.  Roasting adds a deep, nutty flavor, but you can also make a quick version of this salad by boiling your potatoes or even cooking them in your microwave.

3 Yukon Potatoes
2 medium  purple potatoes (or 1 cup fingerling)
1 can artichoke quarters, drained and rinsed
2 Tbs fresh Tarragon, chopped
2 Tbs Dijon mustard
2 Tbs tahini
1 lemon, zest and juice
3 scallions, thinly sliced
1/4 tsp salt
1/8 tsp black pepper

Roast Potatoes and Artichokes:  Preheat oven and 2 baking sheets to 425.  Cut potatoes into large, but bite-sized pieces.  Drain and rinse artichokes quarters.  Season potatoes with salt and pepper, then spread into a single layer on one of the pre-heated sheet pans.  Repeat with the artichoke quarters.  Roast both until golden brown and potatoes are fork tender, about 25 minutes for potatoes, 12-15 min. for artichokes.  Stir every 7-10 minutes for even browning.

Make your dressing:  Combine remaining ingredients in a blender or shake in a jar.  You should have at least 1/4 cup of dressing.  If not, simply add some more water or lemon juice.  Taste and adjust seasoning.

Make Salad:  When artichokes and potatoes are done roasting, remove from the oven and let cool 10 minutes.  Toss with dressing and serve.

This salad is delicious cold, but even better enjoyed warm.
