Smoky Sweet Potato Hash

While some might think of hash as a "breakfast only" option, I love using this as a topper on salads, wrapped in a tortilla, or even as a nice side dish for a entertaining.

1 medium Onion, diced
2 medium sweet potatoes, scrubbed and diced (skin-on)
1 tablespoon smoked paprika
1/4 tsp salt
1/4 tsp black pepper
1 can berlotti brown beans (or any bean of choice), drained and rinsed well
1/4 tsp garlic powder
1/4 cup chopped chives

To roast potatoes:  Preheat your oven AND a massive (or two smaller) baking sheet pans to 425.  In the meantime, diced your onions and sweet potatoes.  Toss onion and potatoes with smoked paprika, salt, and pepper.  When oven is hot, carefully remove the preheated baking sheet and spread potato mixture into a single layer.  Roast for about 20-25 minutes, stirring frequently to ensure even browning.

To finish:  When potatoes and onions are crispy, remove from the oven and immediately toss with beans, garlic powder, and chives.  Serve with your favorite condiment.

Servings: 2 (this is a big serving, but much-needed for a fueled-up breakfast.  Adapt for your fueling needs)
