Spinach, Tomato, Potato Hash

Serves 6

Use this "recipe" as a base for any hash -- potatoes, veggies of choice, some spice, maybe some beans, and a high roasting temperature.  Crispy potato delight.

4 cups potatoes, red skin, scrubbed and diced
1 medium onion, diced
1/2 pint grape tomatoes, halved
4 cups baby spinach, chopped
15 oz canned white beans (like navy or Great Northernr) rinsed and drained
1 teaspoon chili powder
Salt and pepper, to taste

To make crispy potatoes: Preheat oven to 425.  Place a large baking sheet in the oven to also pre-heat.  Toss the potatoes and onion with salt, pepper, and chili powder.  Carefully remove the pre-heated baking sheet from the oven and spread the potato onion mixture into a single layer.  Roast in the oven until potatoes are tender, about 20-25 minutes, stirring every 8-10 minutes to ensure even browning.

To prepare remaining ingredients:  Season tomatoes with salt and pepper and spread onto a baking sheet, separate from potato mixture.  Roast 20-25 minutes, or until juicy, stirring every 8-10 minutes.  During the last 5 minutes of cooking, add the chopped spinach and beans, toss together, and roast all of these together.

To enjoy:  Toss together potato onion mixture with tomato mixture.  Enjoy with hot sauce, salsa, or any of your favorite breakfast condiments.

For reheating crispiness: Spread desired portion into a single layer on a baking sheet.  Re-roast in a 425 degree oven (or toaster oven) till crispy, about 8-10 minutes.

Yield: About 10-12 cups
