High Addictive Kale Chips

Makes 1 big bowl (or 1 sheet tray)

Kale can be tough in it's raw form.  Even the biggest health advocates can have issues with the endless chewing and its bitter flavor.  Kale chips, though, are highly addictive and easy to make.  Leave a bowl on the counter.  It doesn't stand a chance against even the pickiest eaters.

1 bunch curly kale

Salt and pepper, to taste.

Preheat oven to 250.  Rinse kale under cold water and shake dry.  Strip kale leaves from the stems, but keep the leaves as whole as possible.  Toss the leaves with salt and pepper, if desired (definitely not necessary, though).  Spread the leaves into a single layer on a large baking sheet. 

Place the baking sheet in the oven and bake until kale is completely dry and crisp, about 1 hour.  Stir kale every 20 minutes or so, to evenly dry the leaves.

Leave in a bowl on the counter and try to resist.

What's ridiculous?  There's about 3g of protein in 1 cup of raw kale.
