1-2-3 Pineapple Salsa

Makes 2 1/2 cups

The dance "Salsa" follows a simple 1-2-3 rhythm.  The food "Salsa" follows a simple 1-2-3 rule:  jalapeno, lime, cilantro.  Think beyond the tomato.  This version uses bright, sweet pineapple.  Other ideas involve apricots, peaches, watermelon, and even beans.

1/2 pineapple, peeled, cored, and diced (or one large can diced pineapple, drained)

½ red onion, minced

1 jalapeno, seeded and minced

2 tablespoons chopped cilantro

2 limes, zest and juice

To make salsa:  Combine beans, pineapple, jalapeno, cilantro, and lime zest and juice.   Toss well.  If making a day ahead, keep the ingredients layered in a serving bowl.  Toss well just before serving. 

Serve in fresh lettuce cups for a beautiful appetizer.
