Smoky Stewed Collards

Serves 4

Dried chipotle peppers add a smoky flavor that traditionally comes from smoked ham hocks.  Cooking the greens low and slow in this rich broth imparts a deep, savory flavor into the tender collards.  Traditionalists will ask for collards, but you can experiment with other greens like mustard, turnip, and chard.

1 medium onion, diced
1 medium carrot, peeled and diced
2 cloves garlic, minced
1 bunch collard greens, stems on, chopped
2 dry chipotle peppers
3 cups water
1/2 tsp salt
Ground black pepper, to taste

To cook greens:  Heat a medium pot over high heat.  Add the onion and carrot.  Saute until onions are soft and start to brown, about 20 minutes.  Add the garlic and cook another 2 minutes, just to soften.  Add water as needed to prevent burning.  Add the collards, chipotle peppers, and water.  Cover and bring to a boil.  Reduce to a simmer and cook until greens are tender, at least 40 minutes.  Season with salt and black pepper and serve.
