Chipotle Ketchup

Makes 4 cups

"Real" Ingredients: Tomato, Onion, Apple, Onion, Red Wine Vinegar, Garlic, Chipotle, Salt, Pepper

Make a big batch of this ketchup and freeze in smaller portions for "real food" snacking any time.

1 medium apple, cored and chopped
1 medium onion, diced
1/4 cup red wine vinegar
6 ounce tomato paste
2 teaspoon garlic clove, chopped
1 each chipotle pepper, dried
1/2 teaspoon salt
1/4 teaspoon black pepper
15 ounce tomatoes, crushed
1 cup water

To make ketchup:  Heat a small pot over high heat.  Add onion and apple, along with a pinch of salt.  Cover and cook, stirring often, until onions and apples caramelize, about 5 minutes.  When onion and apple start to stick to the bottom of the pot, add the vinegar and use a spoon to scrape up any bits.

Cook until most of the vinegar has evaporated.  Add the tomato paste and cook unitl slightly darkened, just 1-2 minutes.  Add the remaining ingredients to the pot.  Cover and simmer until aromatic, at least 10 minutes.

Puree ketchup, including the number of chipotles your taste buds request:

Heat levels:
Level 1 -- remove both peppers
Level 2 -- puree 1 pepper
Level 3 -- puree both peppers


Serving Size = 1 tbsp
