Pickled Red Onions on Garden Veggie Burger

Yield: 3 cups

These spicy onions make an addictive topping for any of your favorite foods.  Toss in your salads, sprinkle on your burgers, or spread on flat bread.  Make a big batch and enjoy for a while.  The flavors get better with each day.

2 medium red onion, thinly sliced
1/4 cup apricots, dried, sliced (can also substitute with honey or your preferred sweetener)
1/4 cup red wine vinegar
1/2 teaspoon red chili flake
2 teaspoons ginger, minced
1/2 teaspoon salt
1 cup water

To prepare onions: If you have a mandolin, you can slice your onions paper-thin.  You can also use the slicing blade on a food processor.  Then again, a sharp knife and a sure hand work well.

To make brine:  Combine chopped apricots, vinegar, chili flake, ginger, salt, and water in a microwave-safe container.  Heat until water is steaming, about 2-3 minutes (or use the "Beverage" setting on your microwave).

To pickle onions: Pour brine over pickles.  Let sit for at least 4 hours before enjoying.  Best to let sit overnight, as the flavors will intensify and the onions will soften with each day.
