Cinnamon Almond Butter

Makes about 1 3/4 cups

Use this base for creating any flavors of your favorite nut butters.  Play with different spices, including chai spice, nutmeg, ginger, vanilla, or every smoked paprika and cayenne.  Play with your favorite nuts and seeds, too.  Hazelnuts, cashews, and even pecans are amazing.  Yes, pecan butter.  Ridiculous.

2 cups almonds, raw
1/2 teaspoon cinnamon

To roast almonds:  Place almonds in a dry pan and heat over high heat.  Cook until aromatic and slightly browned, about 5-7 minutes.  Toss once, turn off the heat, and let the residual heat of the pan finish roasting the nuts.

To make nut butter:  Place almonds in a food processor with cinnamon (or other desired flavorings).  Puree.  After about 1-2 minutes, you'll have almond "flour" or "meal".  Scrape down the sides of the food processor, and then puree some more.  It might take about 8-10 minutes to get a creamy butter, but just be patient and scrape down the sides every few minutes.
