Cold Soba Noodle Salad

Enjoy this cold, refreshing salad as the weather starts to turn warmer.  Buckwheat soba noodles are a great whole grain go-to for cold salads all summer long.  They cook fast, have satisfying texture, and offer great nutrition.  Now that's what I call using your noodle.  

Makes 3 cups, serves 4

2 oz soba noodles (1 bundle)
2 tablespoons peanut butter
2 tablespoons ginger
1/4 cup pineapple, diced
1/2 teaspoon red chili flake
2 tablespoons rice vinegar
1 each lime, zest and juice
1 teaspoon tamari, low-sodium
2 tablespoons cilantro, chopped
1/2 cup edamame, frozen and thawed
1/2 each red bell pepper, julienned
3 stalks bok choy, julienned
1 tablespoon black sesame seeds

To cook noodles:  Bring a medium pot of water to a rolling boil.  Drop the soba noodles and cook according to package directions, usually only about 4 minutes for an "al dente" texture.  Drain and rinse under cold water until water runs clear, about 1-2 minutes.

To make Asian Peanut dressing:  Combine peanut butter, ginger, pineapple, red chili flake, rice vinegar, lime, and tamari in a blender.  Puree until smooth.  For peanut allergies, you can substitute roasted almond butter or roasted tahini.

To make salad:  Toss noodles with bell pepper, edamame, bok choy, sesame seeds, cilantro, and dressing.  Toss until well combined.  Chill until ready to serve.
