Quinoa Tabouleh

Who needs cracked wheat when you have quinoa?  This is what I call ancestral fusion:  Grain of the Andes meets flavors of Persia.  Take that, Lasagna Sushi :)


1 cup quinoa
2 medium tomatoes, roma, seeded and diced
1 medium shallot, minced
1 clove garlic, minced
2 tablespoons sherry vinegar
1/2 teaspoon coriander
1/4 teaspoon cumin
1/8 teaspoon cayenne
1/4 teaspoon salt
1/8 teaspoon black pepper
1 medium lemon, zest and juice
1 bunch parsley, curly, chopped

To toast and cook quinoa:  Place quinoa in a medium pot without any water, cover with a lid, and heat over medium heat.  Toast for about 5-7 minutes, until the quinoa smells nutty and starts to pop.  Stir frequently and reduce heat if it beings to burn.  Once most of the quinoa is toasted, add about 1 1/2 cups water, cover, reduce to a simmer, and cook until done, about 10-12 minutes.  While quinoa is cooking, prepare other ingredients.

To make salad:  Combine minced shallot, garlic, dice tomatoes, vinegar, spices, and salt and pepper in a medium bowl.  Let sit at least 10 minutes to soften shallot and garlic.  Add the lemon zest and juice and chopped parsley.  When quinoa is done cooking, remove lid and fluff with a fork.  Let sit for about 5 minutes, until it stops steaming, then toss with parsley tomato mixture.

Refrigerate until ready to serve.  Even better the next day.
