Smoky Broccoli Quinoa Crunch

Smoky, sweet, crunchy, chewy.  All of this sounds like a good idea to me.  Keep your pantry stocked for this easy-go to salad.  For true ease, use frozen broccoli florets instead of steaming fresh.  

This is a great dish for parties, just make extras for yourself.  

Smoky Broccoli Quinoa Crunch

3/4 cups quinoa
2 cup broccoli florets
1 medium shallot, minced
1 medium apples, sweet, cored and diced
1/4 cup raisins
1/4 cup sunflower seeds, dry roasted without oil
2 teaspoons smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tbsp honey mustard
1 tbsp apple cider vinegar

Servings: 4
Yield: 6 cups
