Banana Spelt Bread

Spelt is an heirloom whole grain, a member of the wheat family that has been around since the Egyptians.  It adds extra protein and fiber to these muffins.  

How come I can eat half a loaf of this bread when I can only eat 1 loaf of Starbuck's Banana Nut Bread?

The Starbucks version has 420 calories and 21g of fat per slice.  That's what happens when you use refined white flour, oil, eggs, and sugar.  Even if it is "natural" it's still 420 calories.

This version has whole grain flour, applesauce, almond milk, and dates.  That comes to just 125 calories and less than 3g of fat per slice.  

I'd rather pass on the oil and sugar...pass me another slice of bread, please.

Ingredient and Nutrition Info:

Spelt Banana Bread

1 cup spelt flour
1 cup brown rice flour
2 tsp baking powder
½ tsp baking soda
1/2 tsp salt
¼ cup applesauce
¾ cup dates, soaked in warm water 10 minutes to soften
3/4 cup almond milk
2 tsp vanilla extract
1 ½ cups mashed bananas (about 3 small or 2 large)
½ cup walnuts

Servings: 18
Yield: 2 loaves, 18 muffins, or 3 mini loaves

Serving size: 1/18 of a recipe (2.1 ounces).
