"Super-Fuel" Quinoa Kale Salad

Makes 12 cups

Super-fueled flavors collide in this charged salad.  Enjoy cold as a quick snack, or heat and serve as a filling for stuffed peppers, tacos, or lettuce cups

1/4 cup sliced almonds
2 cups quinoa, tri-color
1 cloves garlic, minced
2 Tbs ginger, minced
2 Tbs currants
½ tsp salt
1 medium sweet potato, peeled and diced
1 bunch Lacinato kale, stemmed and chopped
¼ cup orange juice
2 Tbs rice vinegar
2 tbsp. Miso

To toast almonds:  Place almonds in a dry, medium pot.  Toast over medium-high heat until lightly browned and aromatic, about 7 minutes.  Remove from heat and set aside.

To cook quinoa:  Place quinoa in the same dry, medium pot.  Cover and toast over medium-high heat until quinoa starts to toast, about 7 minutes.  Once quinoa is aromatic and is “popping”, it is done toasting.  Immediately add 4 cups of water, along with the garlic, ginger, currants, and salt.  Cover, bring to a boil, then reduce to a simmer.  Cook until quinoa is tender and bursts, about 15-20 minutes.

To cook sweet potatoes and kale:  When quinoa is done, remove from pot.  In the same pot, place ¼ cup of water (enough to cover the bottom of the pot) and the diced sweet potatoes.  Cover, bring to a boil, and steam.  When sweet potato is almost done, about 5 minutes, add the chopped kale and stir well.  Cook another minute or so, until kale is wilted and sweet potato is fully cooked.  Cook or drain off any excess water.

To make salad:  Combine quinoa, sweet, potato, kale, and all remaining ingredients.  Stir well to fully incorporate.  Let sit for at least 10 minutes.  Even better when allowed to marinate overnight

Yield: Makes about 12 cups
