Wild Blueberry Lemon Muffins

Makes 18 muffins

 

Tiny, juicy wild blueberries are a must for these light, muffins.  You can find them frozen year-round.  Tart lemon balances the blueberry's subtle sweetness for a golden taste of summer.  

2 Tbs ground flax meal + 6 tbsp. warm water
1 1/2 cups garbanzo bean flour
2 tbsp tapioca starch
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp lemon extract
1 cups granulated cane sugar
1 each lemon, zest and juice
1 1/2 cup applesauce
1 cup Wild Blueberries, frozen, thawed, and drained (about 10 oz)

Preheat oven to 350.  Spray 2 large muffin pans with non-stick spray.  For oil-free, use silicon baking pans.

To make flax eggs: Combine flax with 6 tbsp. warm water and let sit for about 5 minutes, till gooey and egg-like

Sift together all of the dry ingredients in a large bowl.

Combine the applesauce, sugar, lemon extract, and lemon zest and juice in a blender.  Puree for about a minute.  Add the set flax eggs and puree more, until smooth and consistent.

Pour the wet into the dry ingredients.  Gently fold the wet into the dry, just until combined.

Fill each muffin cup about 3/4 full.  This should make about 18 full-sized muffins.  Sprinkle the blueberries on top of the batter, evenly distributing. As the muffins bake, the blueberries will sink down into the batter.

Bake at 350 for about 20-25 minutes, until lightly browned and passes the clean-toothpic test.

Remove from oven and let cool 10.  Remove from baking pan and let cool completely before storing.

Refrigerate and consume within a week. Freeze for longer storage.

Yield: Makes 3 dozen mini muffins (or 18 full-sized muffins)
