Blueberry Cardamom Muffins

Makes 18 full-sized muffins

Hidden nutrition comes from mashed sweet potato, ground flaxseed, and whole wheat flour.  Use fresh blueberries in the summer, when they're in the height of the season.  Use frozen blueberries any other time of year for consistent deliciousness.  You can usually find canned sweet potato puree in your grocery.  Or, make your own by roasting whole sweet potatoes and store in the freezer for use any time.

1 cups all-purpose flour
1/2 cups whole-wheat pastry flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cardamom
1/2 tsp salt
2 Tbs ground flax meal + 6 tbsp. warm water
1 cups granulated cane sugar
2 cup mashed sweet potato puree
1 cups blueberries (wild blueberries, if possible)

Preheat oven to 350.  Spray 2 mini-muffin (36) with oil.  For oil-free, use a silicon muffin baking pan.

To make flax eggs: Combine flax with 6 tbsp. warm water and let sit for about 5 minutes, till gooey and egg-like

Sift together all of the dry ingredients in a large bowl.

Combine the banana, applesauce, and sugar in a blender.  Puree for about a minute.  Add the set flax eggs and puree more, until smooth and consistent.

Pour the wet into the dry ingredients along with the mini chocolate chips.  Gently fold the wet into the dry, just until combined.  Be careful not to overmix!

Portion a heaping tablespoon of batter into each mini-muffin cup.  This should make about 36 mini muffins (or 18 regular-sized) muffins.

Bake at 350 for about 15-20 minutes, until lightly browned and passes the clean-toothpic test.

Remove from oven and let cool 10.  Remove from baking pan and let cool completely before storing.

Refrigerate and consume within a week. Freeze for longer storage.
