Grilled Pineapple

Nothing is simpler and more satisfying than pineapple on the grill.  Step up this basic dish by serving with some knobs of ginger and fresh lime wedges, and let your hungry crowd delight in their tropical creations.

Serves 8

1 medium pineapple, cored, and cut into spears
2 inches fresh ginger, cut into knobs
2 limes, cut into wedges
Kabob skewers, for protecting your fingers when serving.

To grill pineapple: Preheat grill over high heat.  This is a good time to get all of your ingredients ready: pineapple spears, lime wedges, ginger knobs.

Place pineapple spears on the grill and let cook over high heat until well- marked, about 3 minutes.  Flip and repeat until every piece has nice caramelization (browning).

To serve:  Remove pineapple from the grill and immediately let guests serve: Skewer a pineapple spear, rub with fresh ginger, squeeze lime, and enjoy.
