Makes 12 muffins

Dried dates offer natural sweetness in these muffins, free of refined sugars or syrups.  Pumpkin, of course, adds all of the moisture that oil might typically bring.  Amp it up with a good kick of pumpkin pie spices.  Double-check the freshness of your spices:  Give them a good whiff and they should immediately hit you with Autumn.

Step-by-step help on Cookbooth:

1 cup dates, soaked in warm water 10 minutes to soften
2 tablespoons Flax meal
6 tablespoons warm water 
1 cups all-purpose flour
½ cups whole-wheat pastry flour
1 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
¼ tsp salt
1 1/2 cup pumpkin puree
1/4 cup almond milk

Cover dates with warm water and let soak at least 10 minutes.

Combine flax meal with the 6 tbsp warm water and let sit for 5 minutes.  This is your flax "egg"

Sift together dry ingredients into a large bowl: Both types of flour, baking soda, baking powder, cinnamon, and salt.

Once dates are soft, squeeze them as dry as you can and place into a blender.  Add the pumpkin, almond milk, and flax "eggs".  Puree until smooth.  

Pour the wet ingredients into the dry and fold until just combined -- be sure not to overmix.

Pour into 12 muffin cups.  For oil-free, use a silicon muffin tin.  Otherwise, you want to lightly oil the muffin liners.

Bake at 350 (convection) or 375 (non-convection) for abour 20-25 minutes, until a toothpick can cleanly be inserted and removed.

Let cool 5 minutes before digging in.  Really killer if you warm them before eating.  Great for breakfast, snacks, or dessert.
