Chia Coconut "Cream" over Cinnamon Apples

Looking for a thick, creamy sauce to pour over warm desserts?  This chia coconut "cream" is exactly what you need.  You can use any sort and flavor of drinkable non-dairy milk (like almond, hempseed, or get crazy with chai soy).  Simply make a batch of this and use over warmed cinnamon apples, berry cardamom compote, in fruit parfaits, or even pumpkin pie.

Chia Coconut Pudding

1/2 cup chia seeds
3 cups coconut milk (unsweetened, low fat)
1 teaspoon vanilla extract
1.5 teaspoon cinnamon

1. To make the porridge:  Combine all ingredients in container and mix well.  Refrigerate overnight.

2. Mix in with fresh berries, spoon over cinnamon baked apples, or swirl together with your favorite fruit compote.

Servings: 8
Yield: 4 cups
