Triple Cherry Jubilee

Makes 2 cups

Enjoy the contrast of flavors from sweet fresh cherries, tart dried cherries, and tangy cherry juice.  Serve this warm as a topping over Chocolate "I-Scream!" or dollop over oatmeal for a delightful breakfast.

2 cups dark red cherries, pitted and divided
2 cups cherry juice
¼ cup dried tart cherries
2 small dark plums, diced
1 each vanilla bean, split lengthwise and seeds scraped
1 Tbs orange zest

To cook cherries:  Mash 1 cup of the dark red cherries into bite-sized chunks.  Set aside the other cup of whole cherries.  Combine the mashed cherries, cherry juice, tart cherries, plums, and vanilla bean in a medium pan.  Simmer until sauce reduces to 1 ½ cups, stirring occasionally, about 12 minutes.  Remove vanilla bean.  Add in reserved dark cherries and orange zest.  Serve warm or chill for later.
