Grilled Tropical Fruit Salad

Serves 10 to 12

When it come to grilling, any of your favorite fruits are fair game!  This simple fruit salad is inspired by the sweet tropical flavors of Central America, but experiment with different fruits as the seasons (and your tastebuds) change.  If you don't have a grill, simply turn on your broiler (on your oven), and char your fruit to bring out their natural sweetness.

1 Pineapple, cored, quartered, grilled, and cut into bite-sized pieces

4 Bananas, halved in the skin, grilled, and cut into bite-sized pieces

2 large Mangos (or 3 smaller), halved in the skin, grilled, and cut into bite-sized pieces

4 limes, halved and charred on the grill

¼ cup coconut flake, toasted

To make salad:  Assemble pineapple, bananas, and mango nicely in a large serving dish.  Sprinkle on the toasted coconut and serve with charred lime.
