Chewy Chocolate Brownie

Makes 16 brownies

Dried dates replace refined sugar or syrup for a nutrient-rich sweetness.  Add dried currants, toasted pecans, or slivered almonds for different variations.  Or just enjoy in simple goodness.

3 cups walnuts pieces
2/3 cup dark, unsweetened cocoa

1 cup Deglet Noor pitted dates, soaked in warm water at least 10 minutes
1 teaspoon vanilla

1 teaspoon ground cinnamon

1/4 teaspoon salt
2-4 tablespoons water, as needed

To make brownies:  Process walnuts and cocoa in a food processor until finely ground.  Remove the dates from the sand squeeze out any excess water.  Add the dates to the ground walnuts, along with the vanilla, cinnamon, and salt.  Process until mixture sticks together, adding reserved date water, if desired, for chewier brownies.

Press brownies into a square pan or container.  Chill for at least 2 hours to set.  Slice into 16 squares and enjoy.

This also works great as a crust for fruit tarts, pies, and other sweet treats.
