Chipotle Baked Beans

Smoked chipotle peppers and a touch of molasses added rich depth to this sticky-sweet classic.  For kid-friendly version, simply leave out the chipotle powder or swap for another smokey spice, like smoked paprika or smoked salt.

Double or triple this batch for entertaining a crowd or freezing leftovers.

 

Serves 4

15 oz Navy beans
1 small onion, diced
1 small apple, cored and chopped
4 dates, chopped
4 tbsp tomato paste
1 tbsp Apple cider vinegar
1/2 teaspoon chipotle powder
4 teaspoon minced garlic
1 tbsp Molasses
Salt and pepper, to taste

To make Chipotle Barbecue Sauce: Preheat a medium pot over high heat.  Add the diced onion and apple, a pinch of salt, cover, and cook over high heat.  Stir frequently and cook until the onions and apple are well-browned, without burning.  Add the tomato paste and cook just a minute more, until the paste is "singed", slightly darker in color.

Add the vinegar and use a wooden spoon to scrape up any bits from the bottom of the pan.

Add the dates, chipotle powder, and about 1 1/2 cup of water.  Partially cover, reduce heat, and gently simmer for at least 10 minutes, until the dates, apples, and onions are completely soft.

Puree sauce in a blender, add molasses (if using), and adjust seasoning.  Your BBQ sauce is ready to go.

To make baked beans:  Preheat oven to 375.  Drain and rinse beans.  Pour the beans into an oven-safe baking dish.  Pour the barbecue sauce over the beans (you might want to save some extra just for dipping...)  Mix well.

Cover dish with foil, place on a sheet pan, and bake 15 min.  Remove cover and bake another 10-15 minutes, until thick and bubbly.  Technically, you could bake these, covered, for up to 2 hours, making them perfect for filling your home with good smells.
