Mediterranean Salad

Serves 4 to 6

A quick and easy salad featuring the bold flavors of the Mediterranean.  This salad tastes best when made a day in advance so that flavors can come together. 

For Salad:

1 (15-ounce) can garbanzo beans, no-salt-added, drained and rinsed

1 seedless cucumber, chopped

1 cup grape tomatoes, halved

1 roasted red bell pepper, seeded and thinly sliced

1 cup spinach, washed and thinly sliced

1/2 red onion, finely chopped

¼ cup Kalamata olives, finely chopped

For Dressing:

¼ cup red wine vinegar

1 teaspoon Dijon mustard

1 tablespoon capers, minced

1 garlic clove, minced

1 teaspoon dried thyme, crushed

1 teaspoon dried oregano, crushed

¼ teaspoon black pepper

To make salad:  In a large bowl, combine all of the salad ingredients.  In a separate, small bowl, combine all of the dressing ingredients and whisk together.  Toss the salad with the dressing and let sit at least 1 hours for flavors to come together.
