2 cups cooked Mayacoba Beans
2 mangos, peeled, pitted, and diced
1 jalapeno, seeded and minced
2 tablespoons chopped cilantro
2 limes, zest and juice
1/4 teaspoon ground black pepper
1/4 teaspoon table salt
To make salsa: Combine beans, mangoes, jalapeno, cilantro, lime zest and juice, black pepper, and salt. Toss well. If making a day ahead, keep the ingredients layered in a serving bowl. Toss well just before serving.
